Guatemalan producers are known for their passion to grow exceptional coffees, based in the long-standing coffee traditions, Mayan heritage, and a spirit of innovation. La Conserva coffee blend is born from this spirit and strive for change, that can be found in much of Central America but that is particularly strong in this region in Guatemala. This coffee is the result of experiments carried out by the PECA team and the producers. These were focused on extending fermentation times in cherry, matched with submerged fermentation. This approach represented a significant change compared to the traditional form of processing carried out by producers all over the country. La Conserva has notes of very ripe fruits; the coffee is clean, fragrant, and the flavours that stand out are reminiscent of preserved fruits, such as peaches in syrup, mangoes in honey, and the local artisanal natural sweets of Guatemala. This community blend reflects and highlights the sweet and fruity profile which is a direct result of innovation on the farm level and teamwork between PECA and producers.
- Coffees are grown under the shade of Ingas, chalum and native trees
- Fermented in cherry for 12 hours and washed after 20-30 hours of fermentation with water
- Fully-sun dried on covered raised beds or patios
- Final sorting and grading meets the standard of Excelso EP (Screen 15+) - SCAA Special Grade.
